Pork tenderloin with Getariako Txakolina wine sauce

Ingredientes
- 800 g of farmhouse pork tenderloin
- 1 glass of meat broth
- 1/2 glass of txakoli wine D.O. Getariako Txakolina
- 200 g of mushroom
- 2 cloves of garlic
- Oil, salt, pepper and flour
Preparation
- In a casserole, put three tablespoons of olive oil to heat, and add two whole garlic cloves. Remove them when they are golden brown.
- Season the sirloin with salt and pepper, coat it in flour and brown it well in the casserole.
- Add the broth and the txakoli and let it cook for about five minutes over low heat.
- Remove the sirloin and slice it.
- Increase the heat to the sauce and let it reduce.
- Serve the sirloin with the sauce and some sautéed mushrooms. Serve the Getariako Txakolina in a glass and enjoy!
