Pork tenderloin with Getariako Txakolina wine sauce

Ingredientes

  1. 800 g of farmhouse pork tenderloin
  2. 1 glass of meat broth
  3. 1/2 glass of txakoli wine D.O. Getariako Txakolina
  4. 200 g of mushroom
  5. 2 cloves of garlic
  6. Oil, salt, pepper and flour

Preparation

  1. In a casserole, put three tablespoons of olive oil to heat, and add two whole garlic cloves. Remove them when they are golden brown.
  2. Season the sirloin with salt and pepper, coat it in flour and brown it well in the casserole. 
  3. Add the broth and the txakoli and let it cook for about five minutes over low heat.
  4. Remove the sirloin and slice it. 
  5. Increase the heat to the sauce and let it reduce. 
  6. Serve the sirloin with the sauce and some sautéed mushrooms. Serve the Getariako Txakolina in a glass and enjoy!
