Palomino
Synonyms: doradilla or dorado (Segovia and Soria), jerez (León, Orense, Santander, Valladolid and Zamora), listan or listan blanco (Cádiz, Gran Canaria, Huelva and Tenerife), albán, albar, bianco (Italy), fransdruif (South Africa), golden chasselas (California), listán común, listão, listrão (Portugal), ojo de liebre, palomina blanca (Jerez de la Frontera), xeres.
A white variety of Spanish origin widespread throughout almost the entire territory due to its high productivity, but it is in Jerez where it is the majority, being the basis of practically all its wines. It was cultivated in Valladolid to "ajerezar" the soleras of Rueda; and due to its high yield it was planted in Galicia and León, to make smallholdings profitable.
It is also very present in the Canary Islands under the name of listán blanco. It is a highly productive vine with large clusters and medium-sized berries with very thin skin, which makes it very sensitive to fungal diseases such as powdery mildew, downy mildew and botrytis. It is very resistant to drought and high temperatures, which is why it is widely used in dry and hot climates.
The wines obtained from this variety are usually light, simple and balanced in the mouth, but it is thanks to the biological aging that takes place in the Marco de Jerez when these wines acquire a very broad organoleptic and qualitative dimension, obtaining finos, manzanillas, amontillados, palos cortados and olorosos, and making some of these wines authentic oenological jewels unique in the world and highly valued by prescribers and consumers. It is said that it is a very neutral variety, which serves to transfer other factors to the wine, whether soil or winemaking.
